What to feed children that is healthy, BUT they will actually eat???? As a mother of 3 fussy eaters all with allergies/sensitivities (and another on the way!), this is something that I contemplate day in and day out. What we believe in our household and what is a popular belief amongst the medical field is that what we feed our children is the epicenter of behavior and concentration. SO! Below are three super healthy and low allergen recipes; we call them “Super Hero Recipes”, which everyone in the family will eat. AND I promise, they are easy, mess free and quick to make!
Dairy Free, Sugar Free, Gluten Free, Vegan
Kale is a green leafy vegetable belonging to the cruciferous family. Cruciferous vegetables are cancer preventative. The main cruciferous vegetables are broccoli, cabbage, brussel sprouts, cauliflower, bok choy, rocket and kale.
Kale is packed full of vitamin K, vitamin A, vitamin C, vitamin E, manganese, magnesium, calcium, iron, omega 3 fatty acids, folate, stacks of fiber and antioxidants. Kale is the superstar of the super food family, because it contains a cross section of anti-cancer agents. It contains lutein, an antioxidant that fights disease. The yellow of the lutein is covered by the green of the chlorophyll. Chlorophyll oxygenates your cells. Bonus. Chlorophyll helps your body to detox, as oxygenation of the blood allows the body to clean itself more efficiently. It also contains sulphorane, which encourages the liver to release agents that detoxify and prevent cancer causing chemicals. It is so difficult to get children to eat green leafy vegetables. But, this is one way to turn this otherwise scary looking vegetable into something so delicious. Served with hot or cold pasta this is so yummy.
4 – 5 cups or one bunch of fresh kale, preferably organic, washed and trimmed
3 cloves of garlic
1 tablespoon of unbleached sea salt
1/2 cup of pine nuts. *alternative: raw activated walnuts
Extra Virgin Olive Oil, starting with one good lug – gage the quantity as you blend
*Activated: means to soak overnight in water to release gases
